Smashed Potatoes

Ingredients

Amount Ingredient Notes
2 lbs Small Potatoes
Coarse Salt
Fresh Ground Pepper
4-6 T Olive Oil
6-8 Sprigs Fresh Thyme Can use dried or a garlic spice mix
Sour Cream For serving - optional
Fresh Chives chopped, for serving - optional

Directions

  1. Preheat the oven to 425 degrees F.
  2. Bring potatoes to a boil in a large pot of water, generously seasoned with salt.
  3. Cook until fork tender, about 8 minutes
  4. Drain and let cool slightly, about 10 minutes
  5. Drizzle two trimmed baking sheets with 1 to 2 tablespoons of oil each.
  6. Arrange potatoes on the baking sheet and lightly crush each potato with the heel of your hand until potatoes are about 1/2 inch thick.
  7. Brush potatoes with remaining oil and season with salt and pepper, and sprinkle with thyme (or garlic spice mix).
  8. Roast, turning halfway through baking time, until golden and crisp - about 25 minutes.
  9. Serve with sour cream and chives if desired.
