Ingredients

Amount Ingredient Notes
2 medium heads broccoli
3 T olive or other vegetable oil
1/2 tsp kosher salt
1/4 tsp cracked pepper
1/2 tsp Tones rosemary seasoning

Instructions

  1. Preheat your oven to 400 degrees
  2. Wash broccoli heads and remove any leaves
  3. Cut up your broccoli into pieces of your desired size
  4. Line a half-sheet pan with foil
  5. Put broccoli pieces on sheet pan
  6. Add oil and mix with broccoli
  7. Add all other spices
  8. Put in the oven and set a timer for 10 minutes
  9. When the timer goes off, check the broccoli for doneness and give it a mix.
  10. If not done, put back in the oven for 5-10 more minutes to desired doneness.

Drunken Caramel French Toast Casserole

Ingredients

1 Stick (1/2 Cup) unsalted butter
3/4 Cup brown sugar packed
2 T light corn syrup
1 -2 large challah or brioche
5 large eggs
1 1/2 Cups half and half
1 tsp vanilla extract
0-3 T Grand Marnier optional
1 tsp orange zest
1/4 tsp salt

Instructions

  1. Grease a 9 x 13-inch baking dish with butter.
  2. In a small saucepan over medium heat,
    1. melt the butter with the brown sugar, corn syrup, and one tablespoon of water,
    2. stirring with a whisk until smooth.
    3. Pour into the prepared pan.
  3. Slice off the crusts from the challah/brioche (it doesn't need to be perfect).
    1. Cut the bread into 1½-in thick slices.
    2. Arrange the bread slices on top of caramel, making sure the entire base of the pan is covered.
  4. In a medium bowl, whisk together eggs, half-and-half, vanilla, Grand Marnier, orange zest and salt until well combined.
  5. Pour evenly over bread.
  6. Cover with plastic wrap and chill at least 20 minutes or overnight.
  7. Preheat the oven to 350°F and set an oven rack in the middle position.
  8. Bake, uncovered, in the middle of the oven until puffed and golden, 40-50 minutes.
  9. Let cool a few minutes (it will deflate), then serve immediately.
  10. The caramel base hardens up as it cools, so it's important to serve hot.

Baked Steelhead Trout

Tasty trout in foil packets

Ingredients

2 lb Steelhead Trout Filet
4 T Butter
2 Garlic Cloves minced - can add more
1 Lemon
3 T Parmesan Cheese optional
Sea Salt & Ground Pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Place filets skin side down on foil packs (just stick them on pieces of aluminum foil big enough to fold up around each piece of fish)
  3. Salt and pepper to taste.
  4. Squeeze lemon juice over the filets
  5. In small bowl, stir together melted butter and garlic.
  6. Brush garlic butter over the filets. Make sure to get the garlic off the bottom of the bowl
  7. Top with Parmesan cheese and sliced lemon, if desired.
  8. Close the foil packs
  9. Bake for 15 minutes or until fish is flaky.
  10. Optional: Broil for 1 to 2 minutes at the end of cooking to slightly brown filet.
  11. Serve immediately.
