Whole Wheat Oatmeal Buttermilk Bread

My favorite whole wheat bread. This recipe was invented to combine my desire for a whole wheat bread and my husband’s desire for a sandwich bread that wasn’t crumbly. The recipe is a bit fiddly, so read through the instructions before you start.

Oatmeail Whole wheat bread

Ingredients

Yeast Bowl
1 T Brown Sugar
1 pkg Active dry yeast or 2 scant T
1/4 C Water Lukewarm
Big Bowl Ingredients
3 C Oats
3 C Boiling Water
1 1/2 C Buttermilk Room Temp
1/4 C Melted Butter
2 T Molasses
3/4 C Maple Syrup
1 T + 1 t Salt
2 C Bread Flour
4-5 C Whole Wheat Flour
Equipment
Large Metal or Glass bowl
Sturdy spatula or dough wisk
Three standard sized bread pans
Whatever pan lube you prefer
Towel or plastic wrap to cover bowl/loaves

Instructions

  1. ​Measure Oats into a big bowl (large enough for all the bread ingredients to mix and raise) and pour in boiling water, stir till water is evenly distributed. Let sit for about 10-20 minutes to absorb water and cool, stir intermittently then let cool on the counter.
  2. When the oat mixture is cooler than body temperature, add buttermilk, melted butter, maple syrup, molasses, salt and 2 cups of bread flour, lightly mix.
  3. In a one cup liquid measure mix 1T brown sugar, yeast and warm water, and let sit till doubled. (if it doesn’t double in 10 minutes or so, your yeast is likely dead and you’ll need fresh yeast)
  4. Stir yeast mixture into the “Big Bowl”.
  5. Start mixing in whole wheat flour, add in increments of ½ C until dough is reasonably dry and hard to stir. Turn out on to a well-floured counter to knead (use some of the extra wheat flour). Knead thoroughly on the floured surface, add extra flour as needed to keep dough from sticking to countertop, dough should not be shaggy or overly wet.
  6. Wheat bread takes more kneading than standard white to get an elastic texture. You know it is done when you poke your finger at the dough and it bounces back.
  7. Put the kneaded dough back into the bowl, cover with a cotton towel or plastic wrap and let raise until doubled. Punch down and form into 3 loaves. Place in greased bread pans. Then let rise again about 30 minutes.
  8. Pre-heat oven to 350.
  9. Lightly slit loaves down the middle just before they go into the pre-heated oven.
  10. Bake in 350 degree oven till brown and bottoms sound hollow. Approx 25-35 minutes.
  11. Let sit to cool to room temp before eating.
Additional Notes

The variable amount of whole wheat flour allows for different flour moisture levels and local humidity to balance your dough. The buttermilk and butter create a softer smoother finer crumb for a more “sandwich” texture bread. The Molasses and Maple syrup give a warm rich flavor to the bread that plain sugar cannot do, you can adjust these variables and ingredients to create a bread that works best for you.

Rise times and baking times will be somewhat variable depending on your home and your oven.

Wagon Wheel Pasta

Wagon Wheel Pasta

Ingredients

Amount Ingredient Notes
1 lb Italian Sausage pork or turkey
1 lb Ground Beef 90% or higher
1 lg Can Crushed Tomatoes
1 lg Can Diced Tomatoes
2 T Olive Oil
Salt to taste
Pepper to taste
1 lb Wagon Wheel Pasta can replace with shells, pipette, farfalle
1 Cup Parmesan Cheese grated
1 T Chopped Garlic
1 Cup Heavy Cream

Instructions

  1. You will want to cook your pasta to finish when the sauce is complete.
    1. Cook pasta to box instructions in well salted water.
  2. In a large skillet (that has a lid) sauté the garlic in the olive oil with the heat to medium.
  3. When the garlic is a pale gold, add the sausage and ground beef.
    1. Break up the sausage and beef to small pieces.
    2. Cook until the sausage and ground beef are cooked through, stirring occasionally.
  4. Add both cans of tomatoes.
  5. Turn the heat up and bring to a boil.
  6. Turn down the heat to medium-low and simmer for ~20 minutes.
    1. Until the fat separates from the other juices and floats free.
  7. Add the cream and turn up the heat.
    1. Cook for 1-2 minutes, stirring frequently.
    2. Until the cream is reduced.
  8. Add salt and pepper to taste.
  9. Add 1/4 - 1/2 cup of parmesan to sauce and stir until melted in.
  10. Either serve sauce over pasta or add pasta directly to the sauce.

Note

Sauce can be prepared ahead of time. It should be reheated gently when pasta is almost cooked.

1/2 C Flour
1/2 C Brown Sugar

1/4 C Butter
1/2 C Walnuts

Note

This is also the dough for rugelach and coffee cakes and Carmel pecan cake and pecan rolls.
  

Dough Instructions

  1. Dissolve yeast and 1 teaspoon sugar in 1/4 cup of water.  Let bubble and double.
  2. In a large bowl put in flour and make a well in center of dough. 
  3. Add rest of ingredients. make sure the butter and the milk are warm not hot. 
  4. Add puffy yeast.
  5. Mix thoroughly with wooden spoon.
  6. Dough should be soft, smooth and elastic.
  7. Let raise until double in clean bowl.
  8. Cover with a cloth. about 1-1 1/2 hours.

Caramel Pecan Coffee Cake Instructions

Makes 2 in in big bundt pan 12 cup size pan.
Or divide recipe in 1/2 and only make 1

  1. Melt butter and mix in rest of ingredients, stirring until smooth.
  2. Pour topping into 2 pans.
  3. Mix together cinnamon and sugar. Divide dough in 1/2 roll out one at a time. brush with melted butter. 
  4. Sprinkle on 1/2 of filling on each one and 1/2 of pecans. 
  5. Roll up into a long log. cut in 12 pieces and place in greased tube pan should be slightly more than 1/2 full. 
  6. Cover and let raise until double about 1-2 hours.  Bake at 350 for 30-40 min. Turn pan upside down right from oven on a cooling rack and spoon any dripping caramel back on cake.

Chocolate chip coffee cake:

Topping: 1 cake

  1. Melt chocolate chips with butter
  2. Spread on rolled out dough (1/2 recipe)
  3. Sprinkle with finely chopped nuts and a bit of cinnamon.
  4. Roll up dough into a log. form into a circle and place in a 9" tube pan.

Chocolate Chip Streusel Topping Instructions

topping: 1 cake

  1. Mix first 4 ingredients. until crumbly.
  2. Stir in nuts and Chocolate chips
  3. Sprinkle on top of dough. then let raise and bake
  4. Sprinkle with streusel topping. Let raise until double about 1-2 hours.

Bake 35-40 min. at 350
