Beef and Barley Stew

Ingredients

Optional: Home made stock (can buy store bought)

2-3 Beef Bones
2 Celery stalks
1 Onion Medium
Salt
Black Pepper
Allspice

Stew:

1 Chuck Roast
1 Onion  Large
3-5 Carrots Cut in Large Chunks
3-5 Celery stalks Cut in large chunks
2-4 Parsnips Cut in Large Chunks
12 oz Mushrooms Cleaned cut into chunks
1 small can Tomato Paste
1 large handfull Garlic Cloves
1 C Mixed dry beans Washed
1 C Medium/Pearled Barley
1-2 T Worcestershire Sauce
1-2 T Smoked Paprika
2 t Allspice berries
Beef Stock/Water/Bouillon
1 C Dry red wine
Salt
Pepper Up to 1 T of peppercorns - but that can leave spice bombs

Instructions

Broth:

  1. Roast beef bones in oven for about an hr until they get brown.
  2. Sautee onion, Carrot and Celery with salt till Onion gets soft and translucent.
  3. Add Beef bones, pepper and allspice berries and enough water to cover
  4. Cook in instant pot for 1 hr. 

Stew:

  1. Cut Chuck roast into 1"-ish chunks. Sprinkle with Salt and Pepper
  2. Heat stock/stew pot with some neutral oil in it. Brown Chuck roast in batches until it is all browned. Set Aside.
  3. Deglaze pot with Red Wine
  4. Put in all vegetables and sauté until onion is soft and glassy. 
  5. Add garlic cloves near the end and lightly sauté.
  6. Put in beans and 1/4 c of the barley.
  7. Fill the pot to cover vegetables and starches with stock, water or bouillon.
  8. Add Worcestershire, paprika and tomato paste. 
  9. Bring to a simmer and cook for 45 minutes - stirring intermittently - add liquid as necessary to keep it from being too sludgy and burning at the bottom of the pot.
  10. Add beef cook for another 30 minutes - stirring intermittently - add liquid as necessary to keep it from being too sludgy and burning at the bottom of the pot.
  11. Add remaining barley and cook for 40 more minutes. - stirring intermittently - add liquid as necessary to keep it from being too sludgy and burning at the bottom of the pot. 
  12. Once the barley and the beans are cooked its ready for eating!
