Wagon Wheel Pasta
Cartwheels with sausage, cream, and tomato

Ingredients

| 1 lb | Italian Sausage | pork or turkey |
| 1 lb | Ground Beef | 90% or higher |
| 1 lg Can | Crushed Tomatoes | |
| 1 lg Can | Diced Tomatoes | |
| 2 T | Olive Oil | |
| Salt | to taste | |
| Pepper | to taste | |
| 1 lb | Wagon Wheel Pasta | can replace with shells, pipette, farfalle |
| 1 Cup | Parmesan Cheese | grated |
| 1 T | Chopped Garlic | |
| 1 Cup | Heavy Cream |
Instructions
- You will want to cook your pasta to finish when the sauce is complete.
- Cook pasta to box instructions in well salted water.
- In a large skillet (that has a lid) sauté the garlic in the olive oil with the heat to medium.
- When the garlic is a pale gold, add the sausage and ground beef.
- Break up the sausage and beef to small pieces.
- Cook until the sausage and ground beef are cooked through, stirring occasionally.
- Add both cans of tomatoes.
- Turn the heat up and bring to a boil.
- Turn down the heat to medium-low and simmer for ~20 minutes.
- Until the fat separates from the other juices and floats free.
- Add the cream and turn up the heat.
- Cook for 1-2 minutes, stirring frequently.
- Until the cream is reduced.
- Add salt and pepper to taste.
- Add 1/4 - 1/2 cup of parmesan to sauce and stir until melted in.
- Either serve sauce over pasta or add pasta directly to the sauce.
Note
Sauce can be prepared ahead of time. It should be reheated gently when pasta is almost cooked.
