Ingredients

Brine

Amount Ingredient Notes
2 Quarts Apple Juice
1 gallon Vegetable Stock
1 C Kosher Salt
6 Cloves Garlic
5 lbs Ice Cubes
1 T Peppercorns
.5 T Whole Allspice
.5 T Candied Ginger
5 Bay Leaves
3 Oranges Peel

Turkey

Amount Ingredient Notes
3 Red Apple
2 Onion
2 Cinnamon Stick
4 Sprigs Rosemary
4 Sprigs Thyme
2 C Dijon Mustard
1 head Garlic
2 Carrots
2 Celery stalks
1/2 C Olive oil
1-2 T Rosemary
1-2 T Thyme
1-2 T Coarsely ground pepper

Turkey Glaze

Amount Ingredient Notes
2 T Brown Sugar
3 T Balsamic Vinegar
1 T Orange Juice
Salt & Pepper to taste
1 C Jam (interesting flavor)
1 C BBQ Sauce

Snow Peas

Amount Ingredient Notes
3 T Sesame Seeds
3 T Olive oil
1.5 Lbs Snow Peas/Green Beans
3/4 Lb Fresh Mushrooms Thin sliced
.25 C + 2 T Teriyaki Sauce

Carrots

Amount Ingredient Notes
3 lbs Baby Carrots
3/4 C Orange Juice
1/2 C + 1 T Brown sugar
1/4 C + 2 T Butter

Instructions

Brine

  1. 52 hours before the turkey goes into the oven
  2. In a pot add 1/2 broth and apple juice and all herbs and spices and heat until simmering
  3. Let simmer about 20 minutes and turn off and let cool or put in fridge overnight
  4. Once room temperature add to brining bag and add remaining broth and apple juice.
  5. Add turkey to bag and add ice to have enough liquid to cover turkey. (should be approx 48 hrs before turkey goes into oven)
  6. Seal bag up tightly.
  7. Put in cooler or other container and surround with remaining ice. Put somewhere cold.
  8. Turn bag/turkey in container at min every 12 hours during brining time.
  9. Make sure turkey and liquid stay very cold by refreshing ice as often as needed.

Turkey Prep

  1. 1 hour before turkey goes in the oven, take turkey out of the brine dry thoroughly and put in pan.
  2. Mince garlic
  3. Cut apples and onions into wedges
  4. Cut Carrots and Celery into approx 6" chunks.
  5. Mix Garlic, olive oil, mustard and any dry loose herbs.
  6. Rub whole turkey inside and out with the mustard mixture.
  7. Split apples/onions/carrots and celery into 2/3 and 1/3 bundles.
  8. Fill turkey neck cavity with as much of the 1/3 bundle as will fit.
  9. Fill turkey body cavity with the 2/3 bundle and any others from the 1/3 bundle that might be left over.
  10. Put 1/2 the fresh herbs in each cavity.
  11. Put probe thermometer in breast not touching a bone and one in thigh not touching the bone.
  12. Preheat oven, when oven is ready and the time is right, put the turkey in the oven.

Glaze

  1. After turkey is in the oven
  2. Put all glaze ingredients in a medium saucepan
  3. Warm on med-low heat until everything is melded together.
  4. When turkey is about an hour out from being done you can start painting the turkey with the glaze.

Snow Peas

  1. Blanch Green Beans or Snow peas
  2. Sautee Mushrooms in sesame oil
  3. Toss in Green Beans and teryaki sauce and cook just a smidge

Glazed Carrots

  1. Peel carrots
  2. Cut carrots on the bias.
  3. Put a small amount of oil in a sauté pan and sauté carrots.
  4. After cooking carrots drain,
  5. Cook remaining ingredients together for the glaze, reduce and pour over carrots.
