Ingredients

1 Loaf | White Bread | sliced - or dried stuffing mix |
1/2 lb | Bacon | diced |
1/2 lb | Pork Sausage with Sage | |
1/2 | Onion | large |
1-2 Ribs | Celery | diced |
2 T | Unsalted Butter | |
1 1/2 Cup | Chicken Broth | |
2 tsp | Poultry Seasoning | |
1/2 oz | Rubbed Sage | |
Pinch | Pepper | ground |
Pinch | Salt |
Directions
- Use stale bread or toast and tear into chunks. Not wonder bread but some good white bread.
- Cook the bacon in a high sided skillet.
- Drain off about 3/4's of the fat from the skillet once done.
- In the same skillet WITHOUT cleaning it, cook the sausage, onions and celery. Sauté until brown, stirring often.
- Drain fat and cool slightly and drain off fat again. Transfer to large bowl with slotted spoon.
- In the same skillet (don’t wash) melt butter over medium heat. Stir in 3/4 cup of broth and heat to simmer, scraping up brown bits. Cool slightly.
- Add bread, poultry seasoning, sage, pepper, salt to bacon mixture that is in the bowl.
- Pour some broth mixture over bread mixture and toss to mix.
- Gradually stir in remaining broth to desired consistency.
- Desired consistency is mushy and the cubes of bread are all moist and starting to mix together.
- Bake at 350 for 40 minutes or until brown.
