Chocolate Ganache

Good on cake as frosting/icing, or on ice cream, or by the spoonful...

Ingredients

Amount Ingredient Notes
5 cups semi-sweet chocolate chips
2 cups heavy cream
1 tsp vanilla

Instructions

Stove top

  1. Heat cream to a boil
  2. Add chocolate chips and vanilla
  3. Stir mixture until melted, combined, and smooth

Microwave

  1. Put cream and chocolate chips in large microwave safe bowl
  2. Heat in 1-2 minute intervals - stirring between each heating until chocolate chips are mostly melted.
    1. Be careful not to overheat
  3. Stir mixture until combined and smooth.

Cooling for frosting

  1. Method 1
    1. Get a larger bowl and fill bottom with ice.
    2. Put bowl of ganache in the larger bowl.
    3. Stir ganache until it has the proper consistency - i.e. thick enough that it won't run off the cake.
    4. Be careful not to get melted water in the ganache
  2. Method 2
    1. Put bowl of ganache in the refrigerator.
    2. Take out every couple of minutes to stir.
    3. Repeat until ganache has the proper consistency.
