Chocolate Ganache
Good on cake as frosting/icing, or on ice cream, or by the spoonful...

Ingredients

| 5 cups | semi-sweet chocolate chips | |
| 2 cups | heavy cream | |
| 1 tsp | vanilla |
Instructions
Stove top
- Heat cream to a boil
- Add chocolate chips and vanilla
- Stir mixture until melted, combined, and smooth
Microwave
- Put cream and chocolate chips in large microwave safe bowl
- Heat in 1-2 minute intervals - stirring between each heating until chocolate chips are mostly melted.
- Be careful not to overheat
- Stir mixture until combined and smooth.
Cooling for frosting
- Method 1
- Get a larger bowl and fill bottom with ice.
- Put bowl of ganache in the larger bowl.
- Stir ganache until it has the proper consistency - i.e. thick enough that it won't run off the cake.
- Be careful not to get melted water in the ganache
- Method 2
- Put bowl of ganache in the refrigerator.
- Take out every couple of minutes to stir.
- Repeat until ganache has the proper consistency.
