Enchilada Casserole – Enchilitos

Ingredients

Amount Ingredient Notes
1 pkg flour tortillas
1 can refried beans
1 medium sized jar salsa mild or medium
1 4oz can tomato sauce
1 lb shredded cheese Cheddar, Jack, or Chihuahua
1 lp ground beef
1 packet taco seasoning
For the Roux:
1 cup milk
2T flour
2 T vegetable oil

Instructions

  1. Make the taco meat
    1. Brown the ground beef in a skillet
    2. Add the taco seasoning and stir to combine.
    3. Set aside.
  2. Lightly grease a 13x17 casserole dish
  3. Put some salsa and half of the tomato sauce all around the bottom of the dish
  4. On a clean counter, lay out all of the tortillas.
  5. Smear a thing layer of salsa on all the tortillas.
  6. Divide the can of beans evenly onto all the tortillas and smear it into the salsa.
  7. Divide the meat evenly onto all the tortillas.
  8. Add some cheese to each tortilla (make sure to save cheese for the top).
  9. Roll up each tortilla and add it to the casserole dish as you go.
  10. Make the Roux
    1. Brown 2 T of oil and 2 T of flour together in a saucepan over medium heat.
    2. Slowly add 1 C of milk while stirring with a whisk constantly until mixture is smooth.
  11. Spoon or pour the rue over the top.
  12. Add salsa and the other half of the tomato sauce.
  13. Add the rest of the cheese on top of all of that.
  14. Bake at 350 degrees for 30-40 minutes or until hot and bubbly.

Note: Can exclude the beef to make vegetarian.
