Enchilada Casserole – Enchilitos

Ingredients

| 1 pkg | flour tortillas | |
| 1 can | refried beans | |
| 1 medium sized jar | salsa | mild or medium |
| 1 4oz can | tomato sauce | |
| 1 lb | shredded cheese | Cheddar, Jack, or Chihuahua |
| 1 lp | ground beef | |
| 1 packet | taco seasoning | |
| For the Roux: | ||
| 1 cup | milk | |
| 2T | flour | |
| 2 T | vegetable oil |
Instructions
- Make the taco meat
- Brown the ground beef in a skillet
- Add the taco seasoning and stir to combine.
- Set aside.
- Lightly grease a 13x17 casserole dish
- Put some salsa and half of the tomato sauce all around the bottom of the dish
- On a clean counter, lay out all of the tortillas.
- Smear a thing layer of salsa on all the tortillas.
- Divide the can of beans evenly onto all the tortillas and smear it into the salsa.
- Divide the meat evenly onto all the tortillas.
- Add some cheese to each tortilla (make sure to save cheese for the top).
- Roll up each tortilla and add it to the casserole dish as you go.
- Make the Roux
- Brown 2 T of oil and 2 T of flour together in a saucepan over medium heat.
- Slowly add 1 C of milk while stirring with a whisk constantly until mixture is smooth.
- Spoon or pour the rue over the top.
- Add salsa and the other half of the tomato sauce.
- Add the rest of the cheese on top of all of that.
- Bake at 350 degrees for 30-40 minutes or until hot and bubbly.
