Crispy Roasted Potatoes

Ingredients

| 1.5 lb | Potatoes | Works well with small new potatoes or potatoes cut into chunks about that size |
| 1 tsp | Sea Salt | Adjust to taste |
| 1 tsp | Cracked Black Pepper | Adjust to taste |
| Garlic Powder | generous sprinkling - to taste | |
| Other Herb Options: | Herbs de Provence, Paprika, adobo blend, italian spice blend, fresh garlic cloves smashed, Thyme - get creative | |
| 1 TB | Olive Oil | Adjust accordingly - should be able to lightly coat the potatoes and help herbs stick |
Instructions
- Preheat oven to 425ºF
- Line baking sheet with foil.
- Rinse and dry potatoes and cut to size. Small new potatoes, cut in half, if using other just cut to similar size.
- Put in pan, pour oil over potatoes and mix around.
- Sprinkle salt, pepper and herbs of choice on them, and mix around to thoroughly and evenly coat potatoes in spices and oil.
- Make sure potatoes are spread around evenly in the pan and not super crowded. If you want them crispy thye need some space.
- Put pan in oven for 15 minutes, stir around and roast for another 15 minutes. They should be done by then, but if they need more time, stir and check again in 10 minutes - repeat until done.
