Ginger Chicken wit Snow Pea Salad

Ginger lovers will fall hard for this easy chicken dish, which can be topped with sesame seeds for extra pizzazz

Ingredients

Amount Ingredient Notes
1 lb Snow peas strings removed
1 T + 2 tsp Canola oil divided
1 T + 1 tsp Low-sodium Soy Sauce divided
1 T Fresh Ginger
1 1/2 lb Chicken breasts boneless and skinless
2 Scallions sliced
2 tsp Sesame Oil

Instructions

  1. Bring a medium saucepan of salted water to a boil.
  2. Fill a medium mixing bowl with ice and water.
  3. Boil snow peas for 2 minutes, drain, and place in ice water for 1 minute to chill. Drain and pat dry.
  4. Combine 2 teaspoons of the canola oil, 1 tablespoon of the soy sauce, and ginger in a shallow bowl.
  5. Add chicken and toss to coat.
  6. Heat remaining canola oil in a large skillet over medium-high heat.
  7. Add chicken and cook until golden and no longer pink inside. ~5 minutes per side.
  8. Transfer to a cutting board and slice.
  9. Combine peas, scallions, sesame oil, and remaining soy sauce in a mixing bowl; toss together.
  10. Serve pea salad with chicken.
