Buttermilk Waffles

Super tasty for Belgian or standard waffles

Ingredients

Amount Ingredient Notes
2 Cups All-Purpose Flour
1/4 tsp Baking Soda
1 1/3 tsp Baking Powder
1 T Sugar
1/2 tsp Salt
2 Eggs Separated
1 3/4 Cups Buttermilk Can substitute sour milk (1 T lemon juice per 1 Cup Milk)
6 T Butter Melted

Instructions

  1. Silt Flour into medium sized bowl.
  2. Add the rest of the dry ingredients (baking soda, baking flour, sugar, salt)
  3. Re-sift all dry ingredients into another bowl.
  4. In a separate bowl, add the egg yolks
  5. Beat egg yolks until light
  6. Add buttermilk and melted butter to the egg yolks and combine.
  7. Add the wet ingredients to the dry ingredients.
  8. Combine with just a few swift strokes
    1. Do not overmix. The batter will be lumpy.
  9. In a separate bowl, whip the egg whites until stiff but not dry.
  10. Fold in egg whites.
  11. Cook waffles as directed by waffle machine.
    1. Usually about 1.25 minutes per side.
  12. For heart shaped waffle maker.
    1. Heat waffle maker on medium until hot.
    2. Add batter and close. Cook for ~1 minute
    3. Turn waffle maker over and cook for another minute or so.
    4. You can keep cooking on either side if it isn't done.
