Buttermilk Waffles
Super tasty for Belgian or standard waffles

Ingredients

| 2 Cups | All-Purpose Flour | |
| 1/4 tsp | Baking Soda | |
| 1 1/3 tsp | Baking Powder | |
| 1 T | Sugar | |
| 1/2 tsp | Salt | |
| 2 | Eggs | Separated |
| 1 3/4 Cups | Buttermilk | Can substitute sour milk (1 T lemon juice per 1 Cup Milk) |
| 6 T | Butter | Melted |
Instructions
- Silt Flour into medium sized bowl.
- Add the rest of the dry ingredients (baking soda, baking flour, sugar, salt)
- Re-sift all dry ingredients into another bowl.
- In a separate bowl, add the egg yolks
- Beat egg yolks until light
- Add buttermilk and melted butter to the egg yolks and combine.
- Add the wet ingredients to the dry ingredients.
- Combine with just a few swift strokes
- Do not overmix. The batter will be lumpy.
- In a separate bowl, whip the egg whites until stiff but not dry.
- Fold in egg whites.
- Cook waffles as directed by waffle machine.
- Usually about 1.25 minutes per side.
- For heart shaped waffle maker.
- Heat waffle maker on medium until hot.
- Add batter and close. Cook for ~1 minute
- Turn waffle maker over and cook for another minute or so.
- You can keep cooking on either side if it isn't done.
