AKA Chocolate, Chocolate Chip Banana Bread

Can be made as a 9”x5”x3” loaf or as muffins. Makes 1 loaf or 12 muffins (depending on muffin size)

Cook Time: mini-muffins 14 Minutes, muffins - 30 Minutes, loaf - 1 Hour 10 Minutes
Total Time: muffins - 45 Minutes, loaf - 1 Hour 25 Minutes
Makes: 48 mini-muffins, 12 muffins, 1 loaf


Ingredients

Amount Ingredient Notes
2 Cups All-Purpose Flour Can use 1 Cup All-Purpose and 1 Cup Whole Wheat
1 Cup Sugar can be white or brown sugar or a combination of the two
1 Stick (4 oz) Butter Melted
1 tsp Vanilla
3 T Cocoa Powder Sifted
2 Cups Chocolate Chips
3 Bananas (very ripe)
1 tsp Baking Soda Sifted
2 Eggs
1/4 tsp Salt

Instructions

  1. Heat oven to 350 degrees
  2. Melt the butter
  3. Put Sugar in medium to large bowl
  4. Add melted butter and mix until integrated.
  5. Add eggs and mix together - do not overmix
  6. Add flour, salt, and vanilla
  7. Sift baking soda and cocoa powder into bowl
  8. Squish bananas and add to bowl.
  9. Mix together until just integrated.
  10. Add chocolate chips and mix through.
  11. Grease desired baking pan with pam
  12. Put into muffin tin or bread pan.
  13. For muffins bake 25-30 minutes.
  14. For mini-muffins ~14 minutes.
    • To check for doneness:
      • poke down through the center of a muffin with a toothpick.
      • If it comes out clean, it is done.
  15. For a loaf bake for 1 hour 10 minutes
    • Be careful when decanting from pan as the loaf will be fragile
  16. Remove carefully from pans and let cool on cooling rack before eating.
