{"id":322,"date":"2024-10-17T15:01:36","date_gmt":"2024-10-17T15:01:36","guid":{"rendered":"https:\/\/abzug.org\/recipes\/?p=322"},"modified":"2026-01-13T02:15:30","modified_gmt":"2026-01-13T02:15:30","slug":"enchilada-casserole","status":"publish","type":"post","link":"https:\/\/abzug.org\/recipes\/2024\/10\/17\/enchilada-casserole\/","title":{"rendered":"Enchilada Casserole &#8211; Enchilitos"},"content":{"rendered":"<p><em>Familiarly known as Enchilitos<\/em><\/p>\n<p>Servings: 4-6<br \/>\nPrep Time:  20 Minutes<br \/>\nCook Time: 30-40 Minutes<br \/>\nTotal Time:  50-60 Minutes<\/p>\n<hr \/>\n<h3>Ingredients<\/h3>\n<table>\n<thead>\n<tr>\n<th>Amount<\/th>\n<th>Ingredient<\/th>\n<th>Notes<\/th>\n<\/tr>\n<\/thead>\n<tbody>\n<tr>\n<td>1 pkg<\/td>\n<td>flour tortillas<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1 can<\/td>\n<td>refried beans<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1 medium sized jar<\/td>\n<td>salsa<\/td>\n<td>mild or medium<\/td>\n<\/tr>\n<tr>\n<td>1 4oz can<\/td>\n<td>tomato sauce<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1 lb<\/td>\n<td>shredded cheese<\/td>\n<td>Cheddar, Jack, or Chihuahua<\/td>\n<\/tr>\n<tr>\n<td>1 lp<\/td>\n<td>ground beef<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1 packet<\/td>\n<td>taco seasoning<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>For the Roux:<\/td>\n<td><\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1 cup<\/td>\n<td>milk<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>2T<\/td>\n<td>flour<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>2 T<\/td>\n<td>vegetable oil<\/td>\n<td><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<h3>Instructions<\/h3>\n<ol>\n<li>Make the taco meat\n<ol>\n<li>Brown the ground beef in a skillet<\/li>\n<li>Add the taco seasoning and stir to combine.<\/li>\n<li>Set aside.<\/li>\n<\/ol>\n<\/li>\n<li>Lightly grease a 13x17 casserole dish<\/li>\n<li>Put some salsa and half of the tomato sauce all around the bottom of the dish<\/li>\n<li>On a clean counter, lay out all of the tortillas.<\/li>\n<li>Smear a thing layer of salsa on all the tortillas.<\/li>\n<li>Divide the can of beans evenly onto all the tortillas and smear it into the salsa.<\/li>\n<li>Divide the meat evenly onto all the tortillas.<\/li>\n<li>Add some cheese to each tortilla (make sure to save cheese for the top).<\/li>\n<li>Roll up each tortilla and add it to the casserole dish as you go.<\/li>\n<li>Make the Roux\n<ol>\n<li>Brown 2 T of oil and 2 T of flour together in a saucepan over medium heat.<\/li>\n<li>Slowly add 1 C of milk while stirring with a whisk constantly until mixture is smooth.<\/li>\n<\/ol>\n<\/li>\n<li>Spoon or pour the rue over the top.<\/li>\n<li>Add salsa and the other half of the tomato sauce.<\/li>\n<li>Add the rest of the cheese on top of all of that.<\/li>\n<li>Bake at 350 degrees for 30-40 minutes or until hot and bubbly.<br \/>\n\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 -
