In our house a must have is a spare log of cookie dough in the freezer at all times. That\u2019s why whenever I make cookies I double the mix so I can store half away ready for a rainy day!<\/em><\/p>\n<p>Servings:  ~ 12 cookies<br \/>\nPrep Time:  Minutes<br \/>\nCook Time:  Minutes<br \/>\nTotal Time:  Minutes<\/p>\n<hr \/>\n<h3>Ingredients<\/h3>\n<table>\n<thead>\n<tr>\n<th>Amount<\/th>\n<th>Ingredient<\/th>\n<th>Notes<\/th>\n<\/tr>\n<\/thead>\n<tbody>\n<tr>\n<td>150 g<\/td>\n<td>Unsalted butter<\/td>\n<td>softened<\/td>\n<\/tr>\n<tr>\n<td>150 g<\/td>\n<td>Brown sugar<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>75g<\/td>\n<td>Granulated sugar<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Egg<\/td>\n<td>medium<\/td>\n<\/tr>\n<tr>\n<td>1<\/td>\n<td>Egg yolk<\/td>\n<td>medium<\/td>\n<\/tr>\n<tr>\n<td>300g<\/td>\n<td>All-purpose flour<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>2T<\/td>\n<td>Malt powder<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>150g<\/td>\n<td>Macadamia nuts<\/td>\n<td>optional - can replace with more chocolate chips<\/td>\n<\/tr>\n<tr>\n<td>1\/2 tsp<\/td>\n<td>Baking soda<\/td>\n<td><\/td>\n<\/tr>\n<tr>\n<td>150g<\/td>\n<td>Chocolate chips<\/td>\n<td>milk (but I prefer semi-sweet)<\/td>\n<\/tr>\n<tr>\n<td>100g<\/td>\n<td>Chocolate bar<\/td>\n<td>70% (or dark chocolate chocolate chunks)<\/td>\n<\/tr>\n<tr>\n<td>1 tsp<\/td>\n<td>Sea salt<\/td>\n<td>flaked<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<hr \/>\n<h3>Instructions<\/h3>\n<ol>\n<li>Melt the butter in a saucepan and allow to sizzle and go to a golden color.<\/li>\n<li>Remove from heat, pour into a large mixing bowl, combine with sugars and allow to cool<\/li>\n<li>Add the eggs and whisk until pale and lighter in consistency.<\/li>\n<li>Add flour, malt powder, bicarbonate of soda and salt and fold until nearly combine.<\/li>\n<li>If using, roughly chop macadamia nuts and add into cookie dough mix. <\/li>\n<li>Chop the chocolate bar into large chunks and set aside half for later. <\/li>\n<li>Combine the remaining half of the chocolate chunks and chocolate chips with the cookie dough. <\/li>\n<li>Mix the chocolate until all ingredients are fully combined and evenly distributed. <\/li>\n<li>Roll out a long strip of cling film and place the cookie dough on top. Wrap with the cling films and roll into a log. Place in the fridge for an hour to firm up (or freezer for half an hour - I\u2019m not very patient so use this one!).<\/li>\n<li>Remove cookie dough log from cling film and cut into 12 slices. <\/li>\n<li>Roll into a ball and place onto lined baking sheet. <\/li>\n<li>Press down lightly on each cookie dough ball and top with 2-3 chocolate chunks. <\/li>\n<li>Bake for 15-18mins at 160 C. (320 F)\n<ol>\n<li>You want to remove the cookies when they\u2019re still soft and appear slightly underdone in the middle.
